Green Tea Red Bean Mousse Cake
Ingredients
2 eggs
0.25 tsp. baking powder
2 -3 tbsp. Green Tea Chrysanthemum Honey
2 tbsp. melted butter
0.25 glass red beans
60 ml water
2 tsp. gelatine powder
1 glass non-dairy cream
60 g flour
75 g sugar
a little green tea powder (for decoration)
Directions for cake
1. Pre-heat oven to 200℃, sift flour and baking powder well.
2. Beat egg, sugar (45g) and Green Tea Chrysanthemum Honey together
for about 10 min. Then add flour and baking powder.
3. Along bowl edge put in melted butter and mix well, pour into 20
cm round cake pan lined with parchment paper.
4. Put into pre-heated oven, bake 15 minutes at 200℃. Let cool. Cut
into 3 layers for later use.
Directions for mousse
1. Whip non-dairy cream (3/4 glass), refridgerate for later use.
2. Add water and sugar (30g) to red beans and boil for a while.
3. Put gelatine powder in 30 ml of water and mix well, melt in hot
water bath, add to red bean solution.
4. Add cream in several parts to red bean solution, mix well.
General directions
1. Line 20 cm cake pan with parchment paper.
2. Place one layer of green tea cake in cake pan, add appropriate
volume of red bean mousse, then place second layer of cake, add red
bean mousse again, then third layer, refrigerate until set.
3. Take cake out of cake pan, smoothen cake edge with cream,
garnish top by piping cream, sprinkle with a little green tea
powder.
